Instructions


1. Prepare the Zucchini:


Using a spiralizer, create zucchini noodles (zoodles) from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set aside.


2. Cook the Vegetables:


n a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
